John T Nordhoff is your Winni man here,, He eats, sleeps and knows his winnies..
I owned (loved and still love) several of the old Winnies in my day, and while I'm a decent on Electrical and Plumbing and some light mechanical issues to some extent, IM NOTTTTTTTTTTTT A CARPENTER so regarding body and roof and framing issues, Im OUT TO LUNCH, SORRY.
Ol John T from Indiana, now in Sunny Florida
Sorry John,, My bad. (slaps hand)
Your new roof looks good! Dad and I did this to a 1972 Winnebago a few years ago. The 2nd to the last truss we made half as tall with a bit less curve, then the end truss we left flat. This allowed the original back of the RV to match up to the new roof line. You can do the same thing to the front but leave about a foot of the old roof so you can fold it over the new rubber roof. From the ground you couldn't even tell it was a curved roof.
We also only used one layer of 1/4" plywood. At one time we had Black EPDM rubber on it, later we replaced it with white TPO. (White makes a HUGE difference in the summer time)

Tim's first Winnebago motorhome roof replacement looked great. When Tim and his dad finished that RV the interior was upgraded as well.Check out Tim's photo's.
i was just curious, where did you buy the EPDM?
is this stuff available at places like Home Depot and Lowes? will the roofing rubber work with a coat of Kool Seal?
My neighbor worked for a roofing company and gave me enough EPDM to cover the roof. Later I replaced it with white TPO, I found it on Ebay. Its a lot tougher than EPDM, but stiffer to work with.
